Atihc has conceived, designed, and implemented a revolutionary process called Anaerobic Cooking® that can quickly transform food without oxygen and without pressure systems or vacuum bags.

Anaerobic Cooking® is based on the perfect oxygen management within the cooking chamber through superheated steam. The management of oxygen, temperature, and cooking time allows for a healthy cooking process that increases nutrients’ bioavailability and prevents harmful substances.

The bioavailability of nutrients in vegetables and fruits will be maximized.
The oxygen-free cooking chamber prevents the oxidation of nutrients. Laboratory analyses have shown 58% higher antioxidant and 20 % higher vitamin content than professional combi-steam oven cooking. Because of these results, flavor and colors will be more intense and shiny, increasing the product’s shelf life.

Atihc’s technology makes it possible to limit the oxidation of fatty acids in meats, thereby preserving nutritional characteristics and preventing the cooking process from destroying or worsening nutrient qualities. Laboratory analysis has shown a 53% reduction in the content of these dangerous and carcinogenic substances.

Superheated steam can dissolve fats, reducing the caloric content of meats. Anaerobic Cooking® applied to baked goods allows for a thin, crisp crust. Superheated steam allows the crust to develop without generating acrylamide, a harmful and potentially carcinogenic substance. Laboratory analysis has shown that bread baked by our baking systems is chewier and softer.
